I love that my world is expanding, it may not be a lot but little by little I notice the things that are changing. Even with the stress of going to school full-time I am still able to appreciate the little things. I know this doesn’t completely revolve around food always, but a little check-in is always nice to do, even if it is for my own mental health.
I am going to be working with a local chef and visiting a few farms and ranch’s around the Midwest to interview the people working there, and also seeing what their techniques are. I am extremely excited to meet these new people and learn some things from them. This first farm I think we are going to visit is The Hutterites farm in Mitchel SD.
From my understanding The Hutterites make their own ham and have a root cellar, they also raise chickens and garden in the spring and summer. Hopefully they share some great ideas with me when I am able to interview them. I would be honored to view their accomplishments and overview some of their processing.
Farming and ranching aren’t for everyone but even if you only have a little garden such as I; I think it would be a great learning experience from the people, not in the back of the house of a restaurant but the people who invest their life and generations into perfecting agriculture for all of us to enjoy that farm-to-table taste.
I am also excited to say that I bought a new knife bag to carry all my tools and everything else. It is a noble backpack that I bought off amazon. It has a sturdy 1 strap made from what I think is recycled seat belt material and leather reinforcement. It has two compartments that all together can hold up to 21 knifes, four of those spaces can hold 18’ knifes which is great because of my 18’ slicer was always sticking out of my knife roll. Although I love my knife roll, I was beginning to gather too many knifes and tools for work, like a mechanic that needs a bigger toolbox.
So, with all of these new things happening my world is expanding I am extremely excited that I am beginning to come around to new things: new relationships with chefs, new networking connections with farms, and new toys for me to play with! Things are really building up and I can feel its all going to take off!
Have any specific places I should get in contact with and visit to do an interview? or any items I should check out that you recommend? Tell me by leaving a comment!
